VIETNAMESE CUISINE

A taste of lemongrass, fish sauce & herbs bring the cuisine of this lush green country to life. Outside cultures have had a strong influence over Vietnam, from the Chinese and Khmer dynasties and, in particular, the French colonial rulers. Vietnam cuisine is influenced by China, in kitchen equipment & methods of preparation. French colonists who arrived to Vietnam in the 19th Century bought many influences that have enriched Vietnamese cuisine. The French also left Vietnam with an appreciation for baguettes, café au lait, icecream & beer. A classic example of a Vietnamese dish that mixes historical cultural influences with the local cuisine is the popular bánh mì.

Vietnam is made up of over 50 provinces. The cuisine of Vietnam is complex & distinctly local, the regions of Vietnam – the North, The South, Central & Dalat each have unique cuisines & dishes. The importance of Hanoi, on Vietnam’s culinary scene is unrivalled, and there is no better place to experience Vietnamese street food than Hanoi’s Old Quarter. 

Vietnamese cuisine reflects the concept of balancing five flavours – sweet, sour, salty, hot (spicy) & bitter. Meals are mostly shared dishes served all at once. A typical meal may include a soup, rice, a vegetable dish,grilled or steamed meats, fresh fruit and salad, all placed on the table at once.

CAMBODIAN CUISINE

The cuisine of Cambodia is one of Asia’s hidden treasures – whilst many say its a mixture of Vietnamese & Thai cuisines, this is wrong – Cambodian dishes are unique.

Fresh herbs, galangal, ginger & tamarind are in abundance in Cambodian cooking as is prahok, a fermented fish paste. In Cambodian cuisine, vegetable are most often the main ingredient. A typical Cambodian meal consists of a soup, salad, a fried dish & steamed rice, followed by tropical fruit or sweets. The cuisine of Cambodia was also influenced by the French colonists.
